Salmon Zucchini Tart / Quiche mat Saumon a Courgette

Number of people: 4 / working time: 10 minutes / cooking time: 30 minutes / cost: approx. 11 €

Ingredients for 1 tart

1 sheet short crust pastry
3 eggs
200 ml / (3/4 cup) low-fat single cream
200 g (7 ounces) raw salmon, chopped in dices
1 zucchini, grated
50 g (approx.2 ounces) arugula
1 tablespoon fresh cilantro, divided
2 tablespoons chopped green onion, divided
1 teaspoon curry powder
1 teaspoon ginger powder
1 tablespoon olive oil
Salt and pepper

Instructions

  • Preheat oven to 200 degrees C. Roll out pastry into a circle and mold pastry up sides. Pierce bottom of tart with a fork.
  • Prepare the filling: Mix eggs, cream, curry, ginger, salt and pepper. Set aside.
  • Stir-fry the grated zucchini with salt and pepper and olive oil.
  • Pour zucchini into the pastry, top them with the salmon dices, pour the egg mixture over it. Top it with onion and cilantro.
  • Bake for 25-30 minutes or until eggs are set. Let rest for 5 minutes and serve topped with arugula.

We ate the tart with a salad as side dish. If you don’t make a salad, then you have to make another side because some people could still be hungry after only ¼ of tart (greedy!). It’s an easy, simple recipe, perfect for those days when you’re pressed for time.

1 EL Olivenueleg

Wat muss ech maache?

  • Schäffchen op 200 Grad virheitzen. Pâte brisée op eng Form setzen an mat der Forschette Lächer dra picken.
  • Bedreet d’Fëllung vir: Mix Eeër, Ram, Curry, Ingwer, Peffer a Salz. Op d’Säit stellen.
  • Gerappte Zucchini mat Peffer, Salz an Olivenueleg broden.
  • Zucchini op de Buedem vum Deesch leen, Saumon drop verstreeën an dat Ganzt mat der Eeër Mixtur bedecken. Frësch Ënn an Koriander drop verstreeën.
  • 25-30 Minutte baken oder bis d’Eeër duerch sinn. Looss et 5 Minutte rouen, dekoréier déng Quiche mat Rucola a scho kanns du et zerwéieren.
